Breakfast BLT Sandwich {Paleo}

You can use any paleo-friendly bagel on the market. But, for this particular recipe, I used Legit Bread Company Brand bagel mix.

The mix itself doesn’t require many ingredients and I like the idea of making them ‘fresh’ as opposed to buying them. Someday I may get adventurous enough to make my own bagel dough but for now, I just wanted to take the guess work out of it!

The mix makes six bagels. I put Trader Joe’s Everything But The Bagel Seasoning on two of them.

Once the bagels cooled, I cut them and put all but two in the freezer.

There is a restaurant near my house that we would always frequent for breakfast pre-paleo/whole30 days. One of the best items on their menu was the Breakfast BLT. It was a full-scale BLT on a bagel – with an egg to make it breakfasty. Now that I have access to these paleo-friendly bagels, it seemed super simple to recreate the breakfast favorite.

  1. Cook your bacon on the stovetop to desired crispiness
  2. Once the bacon is done cooking, remove from pan and pat off excess grease.
  3. Lower heat to medium and crack your egg in the same pan you used for the bacon. The leftover grease from the bacon will both add flavor to your egg, but also keep it from sticking to the pan.
  4. Once the egg whites are complete cooked, flip the egg (carefully as to not break the yolk) and cook for an additional 30 seconds.
  5. Lay out the bottom bagel slice, and layer with romaine lettuce, 1tsp of mayo, a tomato slice, and a bacon slice. Then add your egg on top of the bacon, and add an additional slice of bacon, tomato, romaine lettuce leaf, and bagel top.
  6. Enjoy!
